Ingredients
  

For the Teriyaki Sauce

  • ¼ cup soy sauce or tamari for gluten-free
  • 2 tbsp brown sugar or honey
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp grated ginger
  • 2 cloves garlic minced
  • ½ tsp cornstarch to thicken
  • 2 tbsp water

For the Noodles & Stir-Fry

  • 8 oz noodles udon, ramen, or rice noodles
  • 1 tbsp vegetable oil
  • 1 bell pepper thinly sliced
  • 1 carrot julienned
  • 2 green onions chopped
  • 1 tbsp sesame seeds for garnish

Instructions
 

Step 1: Cook the Noodles

  • Boil noodles according to package instructions. Drain and rinse under cold water to stop cooking. Set aside.

Step 2: Make the Teriyaki Sauce

  • In a small bowl, whisk together soy sauce, brown sugar, rice vinegar, sesame oil, ginger, garlic, cornstarch, and water until smooth.

Step 3: Stir-Fry the Vegetables

  • Heat vegetable oil in a large pan over medium-high heat.
  • Add bell pepper and carrot, stir-frying for 3-4 minutes until slightly tender.
  • Pour in the teriyaki sauce, stirring until it thickens (1-2 minutes).

Step 4: Combine & Serve

  • Add the cooked noodles to the pan, tossing to coat evenly.
  • Garnish with green onions and sesame seeds. Serve immediately.
