For the Teriyaki Sauce
- ¼ cup soy sauce or tamari for gluten-free
- 2 tbsp brown sugar or honey
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp grated ginger
- 2 cloves garlic minced
- ½ tsp cornstarch to thicken
- 2 tbsp water
For the Noodles & Stir-Fry
- 8 oz noodles udon, ramen, or rice noodles
- 1 tbsp vegetable oil
- 1 bell pepper thinly sliced
- 1 carrot julienned
- 2 green onions chopped
- 1 tbsp sesame seeds for garnish
Step 2: Make the Teriyaki Sauce
In a small bowl, whisk together soy sauce, brown sugar, rice vinegar, sesame oil, ginger, garlic, cornstarch, and water until smooth.
Step 3: Stir-Fry the Vegetables
Heat vegetable oil in a large pan over medium-high heat.
Add bell pepper and carrot, stir-frying for 3-4 minutes until slightly tender.
Pour in the teriyaki sauce, stirring until it thickens (1-2 minutes).
Step 4: Combine & Serve
Add the cooked noodles to the pan, tossing to coat evenly.
Garnish with green onions and sesame seeds. Serve immediately.
