Ingredients
  

For the Seitan Dough:

  • 1 cup 120g vital wheat gluten
  • ¼ cup 30g chickpea flour (or all-purpose flour)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • ¾ cup 180ml vegetable broth
  • 2 tbsp soy sauce or tamari for gluten-free

For Cooking Broth (Optional):

  • 4 cups 1L water or vegetable broth
  • 2 tbsp soy sauce
  • 1 bay leaf
  • 1 tsp black peppercorns

Instructions
 

Prepare the Dough

  • Mix dry ingredients: In a large bowl, whisk together vital wheat gluten, chickpea flour, garlic powder, onion powder, and smoked paprika.
  • Add wet ingredients: Pour in vegetable broth and soy sauce. Stir until a shaggy dough forms.
  • Knead: Turn onto a clean surface and knead for 3–5 minutes until elastic. Let rest for 10 minutes.

Shape & Cook

  • Divide: Cut dough into cutlets, strips, or nuggets (size depends on use).
  • Simmer (Recommended):
  • Bring cooking broth to a gentle simmer.
  • Add seitan pieces and cook for 45 minutes, turning occasionally.
  • Alternative: Steam:
  • Place in a steamer basket over boiling water for 30–40 minutes.

Finish & Serve

  • Cool: Let seitan rest 5 minutes before slicing.
  • Sear (Optional): Pan-fry, bake, or air-fry for a crispy exterior.
