- 1 cup 120g vital wheat gluten
- ¼ cup 30g chickpea flour (or all-purpose flour)
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- ¾ cup 180ml vegetable broth
- 2 tbsp soy sauce or tamari for gluten-free
For Cooking Broth (Optional):
- 4 cups 1L water or vegetable broth
- 2 tbsp soy sauce
- 1 bay leaf
- 1 tsp black peppercorns
Prepare the Dough
Mix dry ingredients: In a large bowl, whisk together vital wheat gluten, chickpea flour, garlic powder, onion powder, and smoked paprika.
Add wet ingredients: Pour in vegetable broth and soy sauce. Stir until a shaggy dough forms.
Knead: Turn onto a clean surface and knead for 3–5 minutes until elastic. Let rest for 10 minutes.
Shape & Cook
Divide: Cut dough into cutlets, strips, or nuggets (size depends on use).
Simmer (Recommended):
Bring cooking broth to a gentle simmer.
Add seitan pieces and cook for 45 minutes, turning occasionally.
Alternative: Steam:
Place in a steamer basket over boiling water for 30–40 minutes.
