Ingredients
  

  • 1 cup pastina pasta or substitute with stelline or orzo
  • 4 cups chicken broth or vegetable broth for a vegetarian option
  • 1 large egg optional, for added richness
  • ΒΌ cup grated Parmesan cheese or Pecorino Romano
  • 1 tablespoon butter optional, for extra creaminess
  • Salt and pepper to taste
  • Fresh parsley optional, for garnish

Instructions
 

  • Prepare the Broth: In a medium saucepan, bring the chicken broth to a gentle boil over medium heat. Season with a pinch of salt if needed.
  • Cook the Pastina: Add the pastina to the boiling broth. Stir occasionally to prevent sticking. Cook for 5-7 minutes, or until the pasta is tender.
  • Add the Egg (Optional): In a small bowl, whisk the egg. Reduce the heat to low and slowly pour the egg into the soup while stirring continuously. This will create silky ribbons in the broth.
  • Finish with Cheese and Butter: Turn off the heat. Stir in the grated Parmesan cheese and butter until melted and combined.
  • Season and Serve: Taste and adjust seasoning with salt and pepper. Ladle the pastina into bowls and garnish with fresh parsley if desired.
