Ingredients
  

For the Chicken and Pasta:

  • 1 lb 450g boneless, skinless chicken breasts or thighs
  • 12 oz 340g penne pasta (or gluten-free alternative)
  • 2 tbsp olive oil
  • Salt and pepper to taste

For the Sauce:

  • 1 cup 150g sun-dried tomatoes, chopped
  • 3 garlic cloves minced
  • 1 cup 240ml chicken broth
  • 1 cup 240ml heavy cream
  • ½ cup 50g grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes optional
  • Fresh basil or parsley for garnish

Instructions
 

Cook the Pasta:

  • Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

Prepare the Chicken:

  • Season the chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook the chicken for 5-6 minutes per side until golden and cooked through (165°F internal temperature). Slice into bite-sized pieces.

Make the Sauce:

  • In the same skillet, sauté sun-dried tomatoes and garlic for 1-2 minutes. Add chicken broth, heavy cream, Parmesan, Italian seasoning, and red pepper flakes. Simmer for 5-7 minutes until thickened.

Combine Everything:

  • Add the cooked pasta and chicken to the skillet. Toss to coat in the sauce, adding reserved pasta water if needed. Garnish with fresh basil or parsley.
