Ingredients
  

  • 1 cup cornmeal
  • ½ cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup buttermilk or 1 cup whole milk + 1 tablespoon white vinegar or lemon juice
  • 1 large egg
  • 2 tablespoons melted butter or bacon grease
  • 2-3 tablespoons vegetable oil or bacon grease for frying

Instructions
 

  • Whisk dry ingredients (cornmeal, flour, baking powder, baking soda, salt) in a bowl.
  • In another bowl, mix wet ingredients (buttermilk, egg, melted butter).
  • Combine wet and dry ingredients to form a batter. Add water if too thick.
  • Heat oil or bacon grease in a cast-iron skillet over medium heat.
  • Drop 2-3 tablespoons of batter into the skillet, spreading gently into a circle.
  • Cook for 2-3 minutes per side, until golden and crispy.
  • Serve warm with butter, syrup, or your favorite toppings.
