Ingredients
- 2 cups ditalini pasta
- 2 tablespoons olive oil
- 3 cloves garlic minced
- 1 can 14 oz diced tomatoes
- 2 cups vegetable broth
- ½ cup heavy cream or coconut milk for dairy-free
- ½ cup grated Parmesan cheese or nutritional yeast for vegan
- ¼ cup fresh basil chopped
- Salt and pepper to taste
Instructions
Cook the ditalini pasta according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.
In a large skillet, heat olive oil over medium heat. Sauté garlic until fragrant, about 1-2 minutes.
Add diced tomatoes and vegetable broth. Simmer for 5-7 minutes.
Stir in heavy cream and let the sauce simmer for another 2-3 minutes.
Toss the cooked pasta in the sauce, adding reserved pasta water as needed to reach your desired consistency.
Stir in Parmesan cheese and fresh basil. Season with salt and pepper to taste.
