Ingredients
  

  • 2 lbs Russet potatoes thinly sliced
  • 1 cup sharp cheddar cheese shredded
  • ½ cup fresh chives finely chopped
  • 1 cup heavy cream
  • ½ cup Parmesan cheese grated
  • 2 tbsp butter for greasing
  • 1 tsp garlic powder
  • Salt and pepper to taste

Optional Add-Ins:

  • 4 slices turkey bacon crumbled
  • ½ cup green onions sliced
  • ¼ tsp smoked paprika

Instructions
 

  • Preheat the Oven: Set your oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter.
  • Prepare the Potatoes: Wash, peel, and thinly slice the potatoes (about 1/8-inch thick). Soak in cold water for 10 minutes, then pat dry.
  • Layer the Ingredients:
  • Arrange a single layer of potato slices in the dish.
  • Sprinkle with cheddar cheese, chives, salt, and pepper.
  • Repeat layers, finishing with Parmesan cheese on top.
  • Add the Cream: Pour heavy cream evenly over the layers.
  • Bake: Cover with foil and bake for 45 minutes. Remove foil and bake for another 15-20 minutes, or until golden and tender.
  • Rest and Serve: Let the bake rest for 10 minutes before serving.
