Ingredients
  

  • 1 pound ground beef 80/20 blend recommended
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • ½ teaspoon red pepper flakes optional, for spice
  • 1 teaspoon fresh sage finely chopped (or 1/2 teaspoon dried sage)
  • ½ teaspoon fresh thyme or 1/4 teaspoon dried thyme
  • 1 tablespoon olive oil for cooking
  • 1 teaspoon maple syrup optional, for sweetness

Prepare the Seasoning Mix:

  • In a small bowl, combine the garlic powder, onion powder, smoked paprika, black pepper, salt, red pepper flakes (if using), sage, and thyme. Mix well to ensure the spices are evenly distributed.

Mix the Ingredients:

  • Place the ground beef in a large mixing bowl. Sprinkle the seasoning mix over the meat, then add the maple syrup (if using). Using your hands or a spoon, gently mix everything together until the spices are evenly incorporated. Avoid overmixing to keep the sausages tender.

Shape the Patties:

  • Divide the mixture into 8 equal portions. Roll each portion into a ball, then flatten it into a patty about 1/2-inch thick. Use your thumb to make a slight indentation in the center of each patty—this helps them cook evenly.

Cook the Sausage:

  • Skillet Method: Heat the olive oil in a large skillet over medium heat. Add the patties in a single layer (work in batches if needed) and cook for 3-4 minutes per side, or until golden brown and cooked through. The internal temperature should reach 160°F (71°C).
  • Baking Option: Preheat your oven to 375°F (190°C). Place the patties on a parchment-lined baking sheet and bake for 15-20 minutes, flipping halfway through.
  • Air Fryer: Arrange the patties in a single layer in the air fryer basket. Cook at 375°F (190°C) for 8-10 minutes, flipping halfway through.

Rest and Serve:

  • Once cooked, let the sausages rest for 2-3 minutes. This allows the juices to redistribute, ensuring every bite is moist and flavorful. Serve warm and enjoy!
